These healthy chicken meatballs are something your whole family will love and ask for. I have made this for football kickoff nights and for special birthday dinners.
These meatballs are a versatile recipe that can be flavored however you want to go with a variety of sides. Also, each meatball is low in fat and has a good amount of protein. But the best part is the taste!
Please give these a try and let me know what you think!
Why you’ll love this recipe
My chicken meatballs are full of flavor and are a healthier spin on meatballs. By using ground chicken, you will eliminate a good amount of fat that would be in beef.
These meatballs can be flavored many different ways. If you wanted Greek meatballs, just switch out the Italian seasoning for Greek. Cajun seasoning would also work really well here.
Another added benefit here is the protein! I’m always looking for ways to get in my protein and these have 16 grams in 4 meatballs. It’s a nice way to switch up a protein source.
How to make the best healthy chicken meatballs
Preheat the oven to 400 degrees.
Line a baking sheet with aluminum foil and spray with nonstick spray.
Start with a large mixing bowl and put all the ingredients inside. Gently mix them all together with your hands and be careful not to overmix as it can make them tough.
Once the ingredients are incorporated, start to make small meatballs in your hands. Gently, roll them together until formed.
I use a food scale to make sure they are uniform, but this is not necessary. If weighing the meatballs, they come to around 24-25 grams each.
Place each meatball on the lined tray and try to evenly space them out.
Put the tray in the oven and bake for 14-18 minutes until the internal temperature is 165 degrees.
FAQs
How do you keep chicken meatballs from falling apart?
These meatballs are kept together with a binder of egg and breadcrumbs. If you don’t add these, then your meatballs will fall apart.
Why are my chicken meatballs tough?
Chicken meatballs can get tough if they are overmixed. Be gentle with the mixture while combining ingredients. It doesn’t have to be perfect, but well combined.
What do you eat with chicken meatballs?
Simmered with some tomato sauce and some mozzarella, served with some bowtie pasta and vegetables is my family’s favorite way to enjoy these.
Put these meatballs on a sub roll with some cheese to have a healthier meatball sub.
If you added Greek seasoning, then they would be great with some tzatziki sauce and pita bread.
Also, with Cajun seasoning, these would be great with sauteed peppers and onions on rice.
Lastly, a low carb way to enjoy would be to put them over riced cauliflower with some tomato sauce and cheese.
