How to Make This High Protein Lasagna Chicken Bake

Lasagna Chicken Breasts

First, preheat the oven to 400 degrees and set out your chicken breasts. Use the large breasts that are around 10-12 ounces a piece and put them on their sides to cut down the middle. You will need at least 2 chicken breasts for a family portion.

Once you have cut the chicken, place some plastic wrap over the top and pound them down to an even thinness. I love a rolling pin like this for flattening chicken and many other cooking needs.

Meanwhile, season the chicken with salt and pepper.

After that, you will put the filling ingredients together of egg, cottage cheese and mozzarella cheese and mix.

Take out a 9 x 13 casserole dish (I love this one) and coat the bottom with a marinara sauce your family enjoys.

After that, place two chicken breast pieces next to each other in the dish.

Next, you will put the cheese filling on the breasts that are in the pan.

Cover the filling with the other breast halves and secondly, add more sauce on the top.

Lastly, top the sauce with more mozzarella cheese and cover the baking dish with foil.

After the dish has been covered, place in the oven for 40-45 minutes until the chicken is cooked through to 165 degrees. For example, I check with a digital thermometer.

Once the dish has cooked through, remove the foil for another 5 minutes to brown up the cheese on top.

My Easy and Healthy Roasted Vegetables would be great with this dish. Italian bread would be nice and just a simple salad tossed with a light dressing would also be perfect.

Ingredients

  • 2 large chicken breasts
  • 1 cup lowfat cottage cheese
  • 1 large egg
  • 1 cup shredded mozzarella
  • 1/2 jar spaghetti sauce
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400 degrees
  • Cut chicken breasts all the way through
  • Cover chicken with plastic wrap and flatten to even thickness, around 1/4 inch and season with salt and pepper
  • Mix egg, cottage cheese and 1/2 cup mozzarella in another bowl
  • Spread a thin layer of spaghetti sauce in the bottom of the casserole dish
  • Place two chicken breast halves into the pan and cover with cheese mixture
  • Put the other chicken breast halves on top and cover with spaghetti sauce
  • Add the rest of the mozzarella to the top of the cheese and cover the dish with foil
  • Bake for 40-45 minutes, remove foil and bake another 5 minutes
  • Let sit for a few minutes and serve

  1. Hi. Just a side note…. You are not “butterflying” the chicken breasts if you cut them all the way through.
