Simple and Healthy Crockpot Lasagna Soup

How to make Crockpot Lasagna Soup

You need a large crockpot and it will be a life changer for so many things! If you don’t have one, get one for the fall and winter seasons.

Banza pasta chells

The ingredients are simple and I like to use Banza pasta to get even more protein in. Honestly, that is the most exotic ingredient. Everything else you might already have.

All the ingredients are in the crockpot

Start out by browning a pound of meat. I use ground beef, but you could use veggie crumbles, turkey, chicken, anything your heart desires. While this is browning, you will combine some diced tomatoes and tomato paste in the slow cooker.

Time saving tip: Brown the beef when you are not as busy and freeze it, then pull out when you need it.

Then you will add some beef broth, onion, seasonings, V8 juice and the ground beef (once it’s cooked). I like to drain my ground beef after I cook it to get the excess fat off.

Pasta is in the soup

Once everything is in there, you set the slow cooker to low for several hours. Thirty minutes before you are ready to eat, you’ll add in the pasta and some water and then you have a meal.

Crockpot Lasagna Soup Toppings

We like to add parmesan and mozzarella on top and some fresh basil. It also goes great with a little Italian bread or these olive oil crackers.

FAQs

Can you make crockpot lasagna soup with Tortellini?

I think this would be a great idea because this would make the soup more hearty. Just add at the end instead of pasta.

Would I be able to add ricotta?

This would be another great way to make the soup more hearty.

  1. This looks so good. I’m always looking for easy meals that don’t take much time. Especially with our busy schedule.

    1. Another idea to make it even easier, just brown the beef when you have time and freeze it. Take it out the night before and put in the crockpot in the morning!
