I came up with these shrimp fajitas when I was alone one night. Everyone was out of the house and I wanted a fast dinner so I could enjoy my time not cooking. It had to be healthy, minimal effort and delicious. I always have frozen shrimp and veggies on hand, so I decided to try my hand with some fajitas.
Once I figured out what I was having, I made my dinner in about 5-10 minutes. It disappeared even quicker because I immediately realized it was amazing.

How to make the best, quick Shrimp Fajitas
First, assemble the ingredients for the fajitas on the counter and get them ready. But if the shrimps are frozen, make sure to defrost the amount you would like to use.
Second, heat up a skillet on medium high heat and then add cooking spray.
Next, throw in the peppers and onions in the skillet and allow to cook down for about 4 minutes. But if they get watery, drain the mixture with a paper towel. Make sure to season the mixture with salt and oregano.
Once the peppers and onions are cooked, take out of skillet and place in a bowl on the side. Cover with foil to keep them warm.
While leaving the skillet on the heat, respray with nonstick spray and add in the shrimp. Season the shrimp with taco seasoning (try my recipe) and cook on each side for a minute or two until just cooked through and pink.
Lastly, combine the peppers and onions with the shrimp for your fajita mixture. Grab some flour tortillas and desired toppings to make your shrimp fajitas!

Are shrimp fajitas healthy?
This depends on what toppings a person uses and the amount of tortillas. For example, I use low carb tortillas, lettuce, and guacamole (I like these for portion control). This combo has healthy fats, vegetables, protein and less carbs.
If I made it with several large tortillas, cheese, sour cream, tons of guacamole and other creamy toppings, this would no longer be very healthy.
What toppings do you put on fajitas?
Some great toppings would be pico de gallo, shredded lettuce, cilantro, guacamole, fresh jalapenos, lime juice or even some fresh salsa.
How many carbs are in shrimp fajitas?
A typical flour tortilla has 15-20 carbs, and the low carb ones I use have 10. This mixture would make an amazing salad topping if you really wanted to eliminate carbs, just mix some ranch dressing with salsa for a great dressing!

Ingredients
- 1/2 lb shrimp frozen or fresh
- 2 servings frozen peppers and onions 2 servings from whatever kind you buy
- 1 sprinkle taco seasoning do as much as you want
- sprinkle salt
- sprinkle oregano dried
- Cooking spray
Instructions
- Heat medium skillet over medium high heat and spray with cooking spray
