This tasty slow cooker chicken burrito bowl has all the flavors you get at a restaurant, but it is healthier and you don’t have to go out to get it. Simple ingredients, very little prep and a slow cooker will provide you with a meal for six that is customizable and a huge time saver.

How to Make this Tasty Slow Cooker Chicken Burrito Bowl

First, place the chicken breasts in a slow cooker and top with a jar of salsa. Add a little water (around 1/4 cup) to the chicken and salsa mixture.

Next, add in the black beans (drained), frozen corn and about 2 Tablespoons of taco seasoning or just a packet from the store.

Set the slow cooker to low and allow to cook for 5-6 hours and when chicken is cooked through, remove the chicken and cut into bite sized pieces.

Meanwhile, prep the rice you will be using. My kids like to have regular rice, but I like to have cauliflower rice to get my vegetables in and save some calories. In addition, my husband likes to have a mixture of both, so we all customize our base.

Lastly, get the toppings together for the bowls. Personally, I like to sauté some peppers and onions to put on top, add fresh jalapeno, pico de gallo and cheese but you can use whatever you want.

Ingredients

  • 1.5 lbs chicken breast
  • 16 ounce jar mild salsa
  • 15.5 ounce can black beans drained
  • 1 cup frozen corn can be canned too
  • 2 T taco seasoning or 1 packet from the store

Instructions

  • Place chicken breasts in slow cooker
  • Cover chicken with jar of salsa and 1/4 cup water
  • Empty black beans and corn into slow cooker on the chicken
  • Top with 2 T taco seasoning
  • Cook for 5-6 hours on low
  • Remove chicken and roughly chop and return to slow cooker
  • Serve with rice, cauliflower rice or on a bed of lettuce
  • Top as desired
