When I want a filling meal, with very little effort, these Slow Cooker Chicken Enchiladas are great! Cooking the chicken in salsa keeps it from getting dry and the meat is versatile.

This meal is healthy and full of protein! Chicken breast is an amazing source of protein and this is literally stuffed with it.

The effort in this recipe is low. The slow cooker cooks juicy chicken, then add a couple of ingredients to stuff in tortillas and put it in the oven. Voila! Dinner is ready!

How to make Simple Slow Cooker Chicken Enchiladas

First, put the chicken breasts in the slow cooker and cover with the entire jar of salsa. Set slow cooker to low and cook for about 4-5 hours depending on your slow cooker.

Preheat your oven to 375 degrees when the chicken is ready and spray a 13 x 9 casserole dish with nonstick spray. Next, shred the chicken with two forks when it’s done and put in a large mixing bowl. Add 3/4 cup of the enchilada sauce and 1/2 cup of cheese and combine.

After that, put out the tortillas and put a couple spoons of the mixture inside, roll them up and place seam side down in the dish. Lastly, pour remaining enchilada sauce on top and the other 1/2 cup of cheese.

Place the enchiladas in the oven for 15 minutes until the cheese is melted. We like to top these with sour cream, lettuce, or guacamole!

How long does it take to cook chicken in the slow cooker?

This really depends on how large your slow cooker is. I have a large slow cooker, therefore, it has a larger cooking area and will cook chicken a little faster than a smaller model. I usually allow at least 4 hours and if the chicken shreds easily, I know it’s ready.

Can you overcook chicken in a slow cooker?

You can overcook anything if you want to! Just make sure you check on your chicken every once and a while after about 4 hours. Some slow cookers have a probe you can insert and set to change to warm when the internal temperature gets high enough. The chicken will just stay warm until you need it.

Are Slow Cooker Chicken Enchiladas healthy?

Some are healthier than others. I use chicken breast and reduced fat cheese, but if you used chicken thighs, full fat cheese (or more cheese than used here) and added some cream cheese to the salsa and chicken mixture it could get unhealthy pretty quickly. Just use your best judgement on what to use based on your nutritional needs.

Try using corn tortillas instead of flour if you want a low carb recipe. It will save you several carbs and it will be half the calories of the flour tortilla.

Ingredients

  • 1 lb chicken breast
  • 1 jar mild salsa 16 ounces
  • 1 can enchilada sauce 19 ounces
  • 1 cup reduced fat Mexican cheese divided
  • 8 flour tortillas

Instructions

  • Put chicken breast in slow cooker and top with jar of salsa. Allow to cook on low for 4-5 hours
  • Preheat oven to 375 degrees
  • Spray 13 x 9 pan with cooking spray
  • Shred chicken with forks and place in large mixing bowl
  • Add in 3/4 cup of the enchilada sauce and 1/2 cup of the cheese and combine
  • Fill each tortilla with chicken filling, roll up and place seam side down in the dish
  • Pour remaining enchilada sauce on the top and then top with 1/2 cup cheese
