When I go to Chipotle, I always get a bowl with all the yummy toppings. But one of my favorites is the Fajita Veggies and I have figured out how to make them taste just like Chipotle. I also have figured out how to make it with no chopping so this is the easiest way to make Chipotle Copycat Fajita Veggies.

This recipe involves no chopping, very little cooking and few ingredients. For example, you will be using frozen peppers and onions, extra virgin olive oil, oregano and salt and nothing else. These Fajita Veggies are healthy, fast and so delicious!

How to Make No Chop Chipotle Copycat Fajita Veggies

First, heat a cast iron skillet to medium high. Second, put a drizzle of oil in the pan to coat.

Next, put the desired amount of frozen peppers and onions in the skillet to start cooking. Allow the veggies to cook for several minutes while stirring as needed.

After they have cooked through and have a nice char, add a sprinkle of salt and oregano and mix.

There will be a little water in the pan from cooking from frozen, but as long as you take them out with tongs, it will stay in the pan.

These veggies are incredibly versatile! I love to put them on top of my Slow Cooker Burrito Bowls but there are several other ways you can use them.

For example, these are a quick meal starter. If you have some cooked meat, you could cook up these veggies and heat up the meat and have some quick fajitas! Or you could put them on top of a salad to have a fajita salad.

I don’t want char, how can I avoid that?

The char is delicious but if you don’t like it, just don’t cook them quite as long.

Are these like Moe’s Fajita Veggies?

Yes, these are also like Moe’s, however, I think Moe’s has mushrooms if you want them.

How do I need to change this with fresh vegetables?

There is not much difference if you decide to use fresh, but the cooking will take a little less time and it won’t turn out watery.
