Pumpkin Spice Doughnuts are an excellent treat to have around if you love doughnuts, but want a little less fat. The glaze is just a perfect kiss on top of your treat!

These doughnuts are delicious and taste like full fat version of pumpkin bread. However, they are lightened up and made into a doughnut. I use Kodiak Cakes instead of flour to add in some protein and whole grains.
How to make Pumpkin Spice Doughnuts
First, you will need to use a doughnut pan if you want to make doughnuts. If you didn’t want to mess with that, you could always make these into muffins. I won’t tell!
Preheat the oven to 350 degrees and spray your doughnut pan with cooking spray. As the oven preheats, you will combine all the wet ingredients (for the batter) in one bowl and all the dry ingredients in another.
Mix together the wet and dry ingredients before you combine them. You might want to use any extra pumpkin when you try my Protein Pumpkin Spice Oatmeal or my Pumpkin Muffins with Streusel.
After you combine the ingredients, you will fill each doughnut cavity with the batter. You can either spoon it in and smooth it over or put the dough in a sandwich bag, cut off a corner and squeeze through to make it look pretty.
I used all the batter in my recipe and the batter baked over some of the the doughnut holes. But, if you want to avoid this, just don’t use all the batter.
Next, place the pan in the oven and bake for 18-20 minutes. After they are done, let them cool and start on the glaze.
Mix the cream cheese with a little hot water and then add the powdered sugar, maple extract and a dash of salt and whisk together until uniform.
After your doughnuts have cooled, place them in the glaze and then turn them right side up on a bakers rack over a pan to catch the drippings. The glaze will slowly run down the sides and set up. Lastly, add a sprinkle of cinnamon to the top if you want more spices.

Yes, you can and we will in this recipe. No, it won’t be exactly like going to Krispy Kreme, but it will still be delicious.
Can you bake pumpkin spice doughnuts in a muffin pan?
You can do this and they would make some very delicious muffins.
What is the best flour for making doughnuts?
I would say this depends on what you are going for. In this recipe we use Kodiak Cakes but white flour would make them a little fluffier but whole wheat would make them dense. You need to decide what you like and go for it.

Dry Ingredients
- 1 cup Kodiak Cakes Flapjack Mix see note above
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp baking soda
- 1/8 tsp pumpkin pie spice
Wet ingredients
- 1/2 cup canned pumpkin
- 1/3 cup granulated sugar
- 1 egg white
- 2 T light butter
- 2 T milk of choice
- 1/8 tsp vanilla extract
Maple Glaze
- 1 T light cream cheese room temperature
- 1/2 cup powdered sugar
- 1/4 tsp maple extract
- Dash of salt
Instructions
Doughnut Batter
- Preheat oven to 350 degrees
- Spray 6 cavity doughnut pan with cooking spray
- Combine dry ingredients in large bowl
- Combine wet ingredients in large bowl and add in dry ingredients
- Mix well
- Spoon or pipe dough equally into doughnut cavities
- Bake for 12 minutes
- Let cool around 10 minutes on cooling rack
Maple Glaze
- Combine cream cheese with 1 T hot water and whisk until uniform
- Add powdered sugar, maple extract and salt and whisk until uniform
- Once cooled, dip each doughnut in glaze and place on a wire rack over a baking sheet to allow glaze to settle
