Pumpkin Spice Doughnuts with Maple Glaze

These doughnuts are a lighter version of the ones you get at the store. They are baked and delicious!

Ingredients

Dry Ingredients

  • 1 cup Kodiak Cakes Flapjack Mix see note above
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp baking soda
  • 1/8 tsp pumpkin pie spice

Wet ingredients

  • 1/2 cup canned pumpkin
  • 1/3 cup granulated sugar
  • 1 egg white
  • 2 T light butter
  • 2 T milk of choice
  • 1/8 tsp vanilla extract

Maple Glaze

  • 1 T light cream cheese room temperature
  • 1/2 cup powdered sugar
  • 1/4 tsp maple extract
  • Dash of salt

Instructions

Doughnut Batter

  • Preheat oven to 350 degrees
  • Spray 6 cavity doughnut pan with cooking spray
  • Combine dry ingredients in large bowl
  • Combine wet ingredients in large bowl and add in dry ingredients
  • Mix well
  • Spoon or pipe dough equally into doughnut cavities
  • Bake for 12 minutes
  • Let cool around 10 minutes on cooling rack

Maple Glaze

  • Combine cream cheese with 1 T hot water and whisk until uniform
  • Add powdered sugar, maple extract and salt and whisk until uniform
  • Once cooled, dip each doughnut in glaze and place on a wire rack over a baking sheet to allow glaze to settle
