Crockpot Lasagna Soup is an easy, healthy meal for the family to enjoy together. It’s hearty, filling, healthy and full of protein. Seriously, it might be a perfect meal and even my picky kids love it.
How to make Crockpot Lasagna Soup
You need a large crockpot and it will be a life changer for so many things! If you don’t have one, get one for the fall and winter seasons.
The ingredients are simple and I like to use Banza pasta to get even more protein in. Honestly, that is the most exotic ingredient. Everything else you might already have.
Start out by browning a pound of meat. I use ground beef, but you could use veggie crumbles, turkey, chicken, anything your heart desires. While this is browning, you will combine some diced tomatoes and tomato paste in the slow cooker.
Time saving tip: Brown the beef when you are not as busy and freeze it, then pull out when you need it.
Then you will add some beef broth, onion, seasonings, V8 juice and the ground beef (once it’s cooked). I like to drain my ground beef after I cook it to get the excess fat off.
Once everything is in there, you set the slow cooker to low for several hours. Thirty minutes before you are ready to eat, you’ll add in the pasta and some water and then you have a meal.

We like to add parmesan and mozzarella on top and some fresh basil. It also goes great with a little Italian bread or these olive oil crackers.

Equipment
- Slow cooker
Ingredients
- 1 lb ground beef browned and drained
- 3 cups beef broth
- 4 cloves chopped garlic
- 1 T dried parsley
- 1 T dried basil
- 1/2 cup chopped onion
- 28 oz can diced tomatoes
- 6 oz tomato paste
- 1 cup V8 juice
- 2 cups shell pasta
- 1/4 tsp pepper
- 1/4 tsp salt
- 1 cup water
Instructions
- Brown the beef on the stove
- Mix together diced tomatoes and tomato paste in crockpot
- Add broth, cooked beef, garlic, parsley, basil, onion, V8, salt and pepper
- Cover and cook on low for 7-8 hours or on high for 4-5
- 30 minutes before meal time, put in 1 cup water and the pasta. Stir the pasta into the soup and put the lid back on.
- Serve with parmesan cheese, mozzarella cheese, fresh basil and Italian bread.
