With the holidays approaching, you may be in the process of deciding what to give your friends and coworkers. These easy, homemade olive oil crackers would be a welcome change from the normal sugary treats.

Often, you receive a plate of cookies, fudge, candy or other sweet treats. Olive oil crackers will help cut some of the sweetness and offer another option for your friends. You can enjoy these with a spread, cheese or just by themselves.

Olive oil cracker ingredients

You will need flour, sugar, olive oil, fine salt and flaky sea salt. Flaky sea salt adds some depth, so you won’t want to leave it out.

The dough forms and looks like couscous

Getting started

You will need a food processor for this recipe. Place the flour, sugar and fine salt and blend until well combined.

Add in the olive oil and 8 to 12 tablespoons of water and pulse until it becomes crumbly and looks a bit like couscous but you can easily combine it. I would start with less water and add more as needed.

Once you make the dough, divide it in half and roll each one out very thinly. The thinner you roll it, the crispier the cracker will turn out and .

Brushed crackers with sea salt

Cut into whatever shapes you want, and place on parchment-lined baking sheets. This pastry wheel would add some fancy edges but I personally enjoy the rustic, homemade look.

Brush the crackers with some olive oil to help them crisp up and so the seasonings will stick.

Sprinkle with flaky sea salt and pepper or whatever seasonings you choose.

Baking

Bake the crackers at 425 degrees for about 13 minutes. Depending on how thin they are, you may need to add some time.

Once they cool, they can be stored in an airtight container or packaged for gifts! These bags would be cute but you could always just use clear bags.

These crackers would also be a nice complement to my Crockpot Lasagna Soup or just as stand alone snack.

Ingredients

  • 2 cups flour
  • 1 tsp sugar
  • 3/4 tsp fine salt
  • 3 T olive oil a little more for brushing
  • Flaky sea salt

Instructions

  • Preheat the oven to 425 degrees.
  • In processor, blend flour, sugar and 3/4 tsp. fine salt.
  • Add 3 tbsp. oil and 8 to 12 tbsp. water; pulse until dough forms.
  • Divide in half.
  • On a floured surface, roll out each half very thinly.
  • Cut into 1-by-3-inch strips and place on parchment-lined baking sheets; brush with oil.
  • Sprinkle with sea salt and pepper.
  • Bake at 425 degrees until browned at edges, about 13 minutes; let cool.
  • Store airtight at room temperature.
