Shrimp and cheddar grits

Equipment

  • Cheese grater
  • Large pot
  • Large frying pan

Ingredients

  • 1 lb shrimp peeled and deveined
  • 1 cup instant grits
  • 3 1/3 cup water
  • 2 tsp sea salt
  • 2 T unsalted butter divided
  • 3/4 cup milk
  • 3 ounces cheddar cheese (3/4 cup)
  • 1 T olive oil extra virgin
  • salt and pepper to taste

Instructions

  • Combine water, grits and salt in medium/large pot and bring to a boil over medium high heat.
  • Reduce heat and simmer for 5 minutes
  • Stir in milk, 1 T butter and cheddar cheese and continue cooking until thickened.
  • Season the shrimp with salt and pepper
  • Heat large skillet on medium high heat and add 1 T butter and 1 T olive oil. When butter melts, add shrimp, seasoned side down to the pan
  • Season the other side of the shrimp while they cook and flip when they start to turn pink. Continue cooking until they are cooked through. Should take 2-3 minutes for both sides total. Immediately take off heat and serve on bed of grits.
