Ingredients
1lbshrimppeeled and deveined
1 cupinstant grits
3 1/3cupwater
2tspsea salt
2Tunsalted butterdivided
3/4cupmilk
3ouncescheddar cheese(3/4 cup)
1Tolive oilextra virgin
salt and pepperto taste
Instructions
Combine water, grits and salt in medium/large pot and bring to a boil over medium high heat.
Reduce heat and simmer for 5 minutes
Stir in milk, 1 T butter and cheddar cheese and continue cooking until thickened.
Season the shrimp with salt and pepper
Heat large skillet on medium high heat and add 1 T butter and 1 T olive oil. When butter melts, add shrimp, seasoned side down to the pan
Season the other side of the shrimp while they cook and flip when they start to turn pink. Continue cooking until they are cooked through. Should take 2-3 minutes for both sides total. Immediately take off heat and serve on bed of grits.
