Simple Slow Cooker Chicken Enchiladas
This recipe takes very little effort with the slow cooker doing the heavy lifting. You'll enjoy juicy chicken with some spice and delicious flavors.

Ingredients

chicken breast

jar
mild salsa
16 ounces

enchilada sauce
19 ounces

reduced fat Mexican cheese
divided

flour tortillas
Instructions
Put chicken breast in slow cooker and top with jar of salsa. Allow to cook on low for 4-5 hours
Preheat oven to 375 degrees
Spray 13 x 9 pan with cooking spray
Shred chicken with forks and place in large mixing bowl
Add in 3/4 cup of the enchilada sauce and 1/2 cup of the cheese and combine
Fill each tortilla with chicken filling, roll up and place seam side down in the dish
Pour remaining enchilada sauce on the top and then top with 1/2 cup cheese
Place in the oven for 15 minutes and serve
