Preheat oven to 425 degrees
Line baking sheet with foil
Spray sheet with nonstick spray
Wash and cut up vegetables
Place on baking sheet and spread out evenly
Drizzle with olive oil
Toss vegetables evenly in the oil
Season with salt and pepper
Bake in oven for 15-20 minutes or until desired doneness
Optional: top with parmesan cheese and toss
